fast-food giants like McDonald ' s,Kentucky Fried Chicken and-thasUtSDicos.

Xu Zhongmin,vice mayor of the hilly municipality,said the city al
9、one these days boasted more than 1000 hotpot restaurants,which mainly in the form of chain restaurants had spread to 23 prov inces and muni cipalities in China and foreig n coun tries in cludi ng the Un ited States.
The trend has caught the attention of global fast food giants who claim they have n

“ Hotpot may be an exception, "said Huang Yuejin,a senior manager with the Dicos Food Developme nt Compa ny Ltd(Ch ongqin g).
Accord ing to him,a com mon weak ness for most Chin ese restaura nts is that the flavors of their d
11、ishes rely too much on the cook ing skills of in dividual chefs which makes it extremely difficult for cha in restaura nts to achieve sta ndardized producti on.
To eliminate this problem,Chongqing hotpot restaurants learned from the western chains to sta ndardize their raw materials,c on dime nts a

Currently,the annual turnover of hotpot restaurants in Chongqing City stands at about 3 billion yua n( about 361.45 millio n US dollars).
Chou Yi,secretary-general of the Chongqing Hotpot Association,predicted that with more and more people trying this dish,
